The Katsuo, or Bonito, is Kochi’s prefectural fish, reflecting how important fishing is to us. It migrates past our shores in the Kuroshio Current, and is caught using a unique, labor-intensive single-rod-and-line technique. It is prepared into our signature dish – Katsuo-tataki.
